Winery Liquid That Your Consumers Won’t Want To Drink

Wineries produce amazing white and/or red varietals (depending on their location and vines). Statista 2021 tells us that “about 1.52 million metric tonnes of grapes were used for wine production in Australia” in 2020 alone. A by-product of this is grape marc – the solid waste that remains after crushing the juice from the grape, with several thousand tonnes of this waste resulting each year. In addition, there are many millions of litres of liquid wastewater culminating from the host of wineries spread across our bountiful country.

It may not be as glamorous as deciding on branding, or new product names for your upcoming vintage, or posting mouth-watering images to your socials, but like any business, it’s often the back-end (pardon the pun!) non-customer-facing processes that you put in place that help determine the overall success of your business.

First – a little refresher on wine wastewater and it’s flow-on effects:

  • It has high levels of naturally occurring sugars
  • If released into local waterways, damaging algae blooms may result
  • Aquatic life can suffer tragic outcomes

Next – what can you do to manage wine liquid waste whist looking after your team, your customers, your community, and the surrounding environment:

  • Wash facilities thoroughly during the harvesting and wine production stages
  • Do not simply discharge directly to yours (or others) land
  • Arrange for the wastewater to be treated and disposed of by specialists

So, whether you’re a new kid on the block producing wines, or wine-making has been in your family for generations, you’ll know firsthand that it’s not all about flavour profiles and labels, but rather it’s a series of processes which may include some or all of grape picking and crushing, observations, fermentation, lots of waiting around, and finally bottling!
